Making a Wedding Cake Pt1: The Cake Testing!

I can't believe I'm making a wedding cake! At 15 years old this is definitely going to be a challenge but no more than it is an amazing opportunity I'm looking forward to! I'm so excited to be able to take you guys along with me!



How it started!

In late February I was contacted about possibly making a wedding cake for a young couple. I was a little hesitant about saying yes because I have never made a wedding cake or such an important cake. (It would be really terrible to mess it up!) After discussing this with my parents I decided it would be something I could take on, given the fact that the couple wasn't looking for anything extremely extravagant. After emailing back and fourth about what they were looking for and flavors we finally set a date to do some cake testing, April 18 at 3pm!



Preparing

Over the course of 3 weeks I compiled a list of flavor combinations. The bride and groom gave me many flavors that they liked which helped a lot! Ultimately I narrowed it done to 10 different flavor combinations.

5.Strawberry w/ Strawberry Buttercream

7.Strawberry w/ Chocolate Buttercream

8.Lemon w/ Whipped Mascarpone Frosting

9.Oreo w/ Oreo Frosting

10.Chocolate/Peanut Butter Swirl w/ Peanut Butter Frosting



The Set Up

I decided instead of making different flavored mini cakes, I would instead make cupcakes. Not only was it less time consuming but I could send home some cupcakes with the bride and groom. I used 3 long rectangular plates and put 4 cupcakes on the first plate and 3 on the other 2. I labeled all the plates with little sticker number then printed out papers with the flavors in corresponding order. I set out water napkins and forks.

The Decision...

The bride and groom really loved all the cupcakes. They immediately fell in love with the Chocolate and Maple Buttercream Frosting. The couple both really loved the Strawberry and Strawberry Frosting; Oreo; and the Chocolate and Chocolate Frosting. After some back and forth about possibly doing different flavored tiers I suggested that they could do a smaller cake than what they were thinking and do cupcakes on the side. They really liked the idea and they decided to do... a Chocolate flavored cake with Maple Buttercream Frosting and Strawberry cupcakes with Strawberry Buttercream Frosting on the side. For the design of the cake the couple decided to just do the Maple frosting on the outside of the cake instead of the traditional white. They share a passion for rock climbing and are incorporating it into the wedding so the lighter brown color of the frosting matched their rock climbing theme. Overall it was a success! I am so excited to be doing this!
